Introduction:

This essay will allow you to demonstrate your knowledge and expertise in Healthy Diet and Building Blocks of Food & Nutrition by recording and analyzing your food intake over a 3-day time period. This essay assignment meets the following Student Learning Outcomes: Identify and explain nutrients in food and the nutrient-specific functions in maintaining health, preventing disease, deficiency and the interaction between the human body’s systems; Complete nutrient analysis of a personal food diary and set goals for personal health; State the significance of the Dietary Guidelines, Food Labels, Dietary Reference Intakes (DRI) and Daily Values as nutrient standards and as part of an overall U.S. dietary guidance system.

Deliverables: 

The Essay reflects basic knowledge of the topics from the lesson and should incorporate key concepts, lesson materials, and supplementary resources as appropriate. It is required to be in a 3-Day Food Log and your analysis of the log should be in essay format. The essay analysis is required to be a minimum of 3-5 pages of content, excluding the title page, reference page, and any appendices (such as the Food Log). The scope of the Essay should demonstrate a good working familiarity of theory, literature, and best practices, as well as workplace implementation and real-world application whenever possible. It must contain evidence of scholarly and professional analysis supported by the appropriate application of analytical methodologies. Step 1: Plan for Activity

  1.    This is a summary of what is expected. Specific instructions are found in Step 2.
  • Be prepared to record your food intake for 3 consecutive using the Food Log provided here.
  • You will analyze your macronutrient and micronutrient consumption using the table provided in Step 3
  • You will compare your diet intake to the DRIs.

 Step 2: Conduct a 3-day Food Log and DRIs

  1. Track your diet for 3 consecutive days using the Food Log provided in Step 1. Include snacks, drinks and any supplements you take.
  2.       Assess your macronutrient consumption documenting the results in the Table provided in Step 3below. Use the Food Comparison Tables, Food Tables resources in the Appendices section and USDA Food Search and Nutrient Search sites to assist you with this analysis.
  3.       Calculate your DRI using the USDA DRI Calculator for Healthcare Professionals. Save or Print the results and save for your essay. You will include this in the Appendix section or upload as a supplementary file for your essay assignment.

Step 3: Write a Paper.

This essay consists of multiple parts. All parts are required in order to be considered for a passing grade.Once you have completed  Step 2, write a paper with 3-5 pages of content addressing the following:

  1. Section 1: Food Log and Macro / Micro Nutrient Assessment – Briefly discuss the benefits of diet analysis and using a food log. Briefly describe how you tracked your diet for three days and any issues that may have arisen. Using Food Log 2, enter the information from your Food Log determining the amount of protein, carbohydrates, fats and micronutrients (i.e., vitamins and minerals) for each item using the USDA resources Food SearchNutrient Search, etc.  Briefly discuss this process and what you learned.
  2. Section 2: DRI Analysis Macronutrients– Using the results from your USDA calculator report, complete the DRI Macronutrient Analysis Table below (Table 1.) and address the analysis instructions that follow.
  • Write down your DRI goal of the three macronutrients (carbohydrate, protein and fat) in grams.
  • Write down your 3-day average intake of these macronutrients in grams.
  • Write down the top three foods sources from your food log where you obtained each macronutrient.
  • Copy the completed table and add it to this section in your essay paper.

Then, fully address the following in narrative discussion format (do not use bullet points).

  • Discuss the health benefits of consuming each macronutrient and associated subtype (i.e., saturated, monosaturated, polyunsaturated fats) if listed.
  • Discuss potential health risks of consuming too much or too little of each macronutrient. Include symptoms of too much or too little (deficiency).

Section 3: DRI Analysis Micronutrients – Using the results from your USDA DRI calculator report complete the DRI Analysis table below and address the analysis instructions that follow.

  • Discuss how your consumption compares to the DRI recommendations from your report. Include specific information from your reports. Did you meet, not meet, or exceed the recommended goals?
  • List two main roles in the body for each of the five micronutrients listed.
  • List and discuss two major symptoms  and health outcomes from not consuming enough of each micronutrient.
  • Briefly discuss potential consequences of exceeding the recommended intake for each micronutrient.

 

Conclusion – a minimum of 3 sentences briefly summarizing the key points in your paper.

References – At least 2-3 peer-reviewed references (in addition to the textbook) are required. Use correct APA format.

Write your paper using the following writing guidelines. Please review the essay rubric prior to proceeding.

  • Use correct APA format (double-spaced text, size 12-point font (Times New Roman preferred), indent paragraphs
  • A title page and reference list are required (abstract is not needed).
  • Correct spelling, grammar, sentence structure and verb tense are expected.
  • The 3-5-page criteria is for content only (excludes cover page, reference page, and any appendices. No abstract is required.)
  • Include a minimum of 2-3 references with associated in-text citations to support the statements made.
  • Section headings are required to organize the content in your work. For example, you should have the following for this essay paper:
  • Introduction – a minimum of 3 sentences telling your reader what to expect in the essay paper.
  • Section 1: Food Log and Macro / Micronutrient Assessment
  • Section 2: DRI Macronutrient Analysis
  • Section 3: DRI Micronutrient Analysis
  • Section 4: Conclusion –
  • Conclusion – a minimum of 3 sentences briefly summarizing the key points in your paper.
  • References – 2-3 peer-reviewed references (in addition to the textbook) are required. Provideall reference sources used in the paper to support your statements. Please note that each reference must be cited in the body of your text at least once in order to count as contributing to the paper. If they are not cited, they will not be counted as contributing references. References are required to be in correct APA format.
  • Appendices – if used. You can copy and paste the required DRI Analysis Report in the appendix section OR you can submit it in the Assignment 1c drop box. Please note the Food Log and DRI Analysis Report is required to be submitted in addition to the Essay paper.
